Speed, and why it outranks rate

At peak, queue length decides revenue more than processing cost does. A basket abandoned at a slow checkout is a total loss where a fee is a fraction, so terminals need to be fast, contactless enabled, and positioned so payment happens while bagging continues. Self-checkout shifts labour rather than removing it and brings its own shrink considerations, which belong in the decision alongside the throughput gain rather than being discovered afterwards.

Cash volume and the bank deposit cap

Grocery still carries meaningful cash in most markets, and that moves the binding constraint from card rates to bank cash-deposit allowances.
